Last week, I had proper sushi for the first time since my diabetes diagnosis. In my head, I was thinking the pickled ginger, protein and Omegas from the tuna and the healthy fat from the avocado would have helped to balance out the white rice. Nope. Proved myself very wrong!! 

 

So, I have created lower-carb sushi for us all to enjoy! It is gluten free, I use agave to sweeten the rice.

 

*Comes with wasabi paste, scratch made pickled ginger, and low-sodium gluten free soy sauce
