Few food experiences beat that of your first taste of Asian street food. I can recall my first Pad Thai experience whilst backpacking across SE Asia. You can almost taste the perfectly balanced sweet, savory, salty, sweet and heat aromatics wafting through the air. You take your first bite and you are forever ruined by Westernized Asian food!

 

My Pad Thai is a cross between authentic and Western. I use Oyster sauce, tamarind and fish sauce for authenticity; however, I add a touch of sweetness, sugar free of course, so that the more authentic flavors do not overpower some of our Western palates. : ) I marinate both the tofu and the chicken, and use fresh spring onion greens I regrow throughout the year. The flavors pop pop pop with every bite!
