I created this dish for an elevated healthy dinner party in Glen Oaks, a posh West Des Moines, Iowa, neighborhood where Shawn Johnson, the Olympic gymnist, used to live. : ) The zucchini rolls are stuffed with a Greek-style ricotta and feta filling and either marinated chicken or chickpeas.
