Spinach and Ricotta Pie with Hard Eggs (Spinach Pascualina)  - This traditional Italian Easter dish was one of my favorites in Uruguay, where they have a massive Italian population. And, they speak Spanish with an Italian accent. It is so much fun! : )

 

I have updated it a bit so it is gluten free with less crust. So, no top pie crust, just a crust on the bottom like a quiche. It is incredibly light, filling, and packed with a hefty nutrition punch! Enjoy a piece or a pie. Eater’s Choice!!
