​Garden Go is flavor-defying, plant-forward, low-carb healthy food on the fly with Diabetes in mind! While each dish is carefully crafted with no-sugar-added and minimal carbs for specific dietary restrictions, all dishes are ideal for anyone looking to eat right without sacrificing flavor and satisfaction.

About 1.5 years ago, I was diagnosed with Type 1 diabetes at the age of 44. While this shook my world upside down, my first thought was, “Looks like it is finally time to start my healthy food business to help as many people with diabetes as possible.” What can I say? I am a make lemonade type of gal, despite being unable to drink it any longer!
​
Within a few days after being released from the hospital with diabetic ketoacidosis, I was writing my book, The Diabetes Experiment, about my experiences. Within a month, I applied for a business license. After almost 15 years of dillydallying with my healthy food business, I was on a tear to make this happen. My tear quickly became a life’s ambition once I learned how diabetes would meet all the criteria of an epidemic if it were contagious. I often say, “Diabetes, the silent epidemic.”

How did I end up in The Villages? Moving to The Villages to start my healthy food business has been a work-in-progress for 10 years actually. My parents have lived in The Villages since 2012. Each time I visit, I have this overpowering feeling that I am meant to be here to help others make the most of their lives.
​
Around 2013 or so, as I was trying to move back to the US after living in South America for years, I looked at opening a healthy food retail location in Brownwood. That was just too far out of reach financially for a small startup. So, I reluctantly had to set my dreams aside and return to life’s realities.
​
In 2018, Andy, my long-time partner, and I started to discuss moving to The Villages to open a tech-based business. I have numerous cybersecurity certifications and he is an expert in technology software, hardware and infrastructure. As we were getting closer to doing this, Andy realized he was not ready to be so far from his parents just yet. So, again, we put the move on hold.

​After evaluating our life aspirations post-pandemic and post-several health revelations, Andy and I quickly decided it was time to follow our dreams and the sunshine to where we can instantly reach so many more people to assist with our unique skill sets.
​
​We are beyond excited about this next chapter in our lives!! We know it is not going to be an easy transition with Andy staying back in West Des Moines for several months and me working my full-time job as an investment analyst for an investment firm in Manhattan while launching the business and hosting events until Garden Go can sustain itself.
